Four Mouth Watering Grilled Cheese Recipes

Did you know that National Grilled Cheese Day is a thing? Because I did! And we started celebrating early so you can get prepared for Thursday, April 12 and celebrate with us!!

We each picked two combos we thought would be even better with some melted cheese and set out to work. And by we, I basically mean Rich who was very into this project. So much so that he’s paired each grilled cheese with a beer to make the combo 100 times better! So let’s start cooking!

Let’s start with my two picks:

Chicken, Pesto and Mozzarella Grilled Cheese

We paired this trio with fresh sourdough, thick cut. I was going to use shredded chicken but Rich had the idea to use lightly breaded chicken filets – which was delicious!! So thick and tender. I slathered on pesto, added the chicken and topped with way too much fresh mozzarella, oh and topped with more pesto for food measure.

Lightly cover outside of bread with butter and cook over medium heat until browned.

Paired with Birra Moretti Siciliana – an Italian beer with orange flower flavours. I was pleasantly surprised, it’s almost like a cider.

Avocado, Bacon and Cheddar Grilled Cheese

Hands down the BEST grilled cheese I’ve ever had! OMG! Again, we used think sliced sourdough and a beautiful combo of extra crispy bacon, mashed avocado and extra cheddar cheese.

Lightly cover outside of bread with butter and cook over medium heat until browned.

Paired with Sierra Nevada Pale Ale – one of my favourite beers, apart from Heineken but apparently that’s not a good enough pair for my beer loving husband. Ha!

And now for Rich’s choices:

Mango Chutney & Goats Cheese

The most skeptical of all the grilled cheeses, goats cheese and mango chutney. For starters, I’d never had mango chutney so wasn’t sure what to expect but in the end, I finished the whole thing! The sweetness mixed with the goats cheese was such a good combo. Served with wholemeal bread, lightlyΒ cover outside of bread with butter and cook over medium heat until browned.

Paired with Cobra Lager – according to Rich this was a no brainer, Indian beer with mango chutney. I don’t get it, but hey he was happy.

Rueben Grilled Cheese

Without a doubt the grilled cheese Rich was most looking forward too. I had no part in it whatsoever. Wholemeal bread, with plenty of Thousand Island Dressing, too much sauerkraut for my liking, over 100g of pastrami and multiple multiple slices of Swiss cheese. Nothing about this combo interested me but I have literately never seen Rich so satisfied with a sandwich. He’s STILL talking about it!

Paired with Erdinger Weissbier Wheat Bear – a German beer, again apparently obvious? I don’t know. I just let him get on with it.
