Quick & Easy Fourth of July Dessert 

Holidays are fun and everything but they can also be very stressful – this party here and one there, can you bring a dessert, a side dish, an appetiser, the list goes on – so let’s talk simple today. This dessert is only as difficult as you make it in my opinion. Sure, you can make sugar cookies from scratch but who has the time and if you’re really in a pinch store bought icing will work (not my favourite but I’m an icing snob). I first time I made this I went for the difficult route, homemade everything and let me tell you by the end of it I wasn’t even exciting to eat it – I honestly just wanted a nap and someone else to clean up the mess I made in the kitchen – this time around I’m showing you the shortcuts to a crowd pleasing dessert.


Sugar cookie base (16-20oz depending on desired thickness)

8 oz cream cheese — softened at room temperature

1 cup confectioners sugar

1 stick of unsalted butter — softened at room temperature

Step One – Make the Cookie Base

1 – Make the sugar cookie mixture per the box ingredients (or homemade as normal)

2 – Spread eventually on a well greased cookie sheet

3 – Bake according to instructions (note: it will take a little longer, plan for anywhere from 3-8 extra minutes depending how thick your cookie is)

Step Two – Cream Cheese Icing 

1 – Soften the crease cheese in a bowl with a spatula until it’s really soft

2 – Then slowly add the softened butter (note: about a tablespoon at a time) and mix by hand making sure all butter is mixed thoroughly before adding more

3 – Very slowly add the confectioners sugar (about 2-3 tablespoons at a time) and mix with electric mixer (note: handheld works best) until all the sugar is added

4 – Optional – a teaspoon of vanilla extract for extra flavour

Step Three – Assembly 

1 – Once the cookie based has cooled, spread icing evenly over the cookie

2 – Mark off a corner as the “stars” and fill with blueberries

3 – Slice strawberries and arrange into rows for the “stripes”

4 – Optional – for added flavour and texture sprinkle coconut shavings on the white stripes
